The meat tenderizer shortens the marinating time and makes the meat extra tender. There are a number of ways to break down the collagens in meat to tenderize it. You can pound the meat with a pointy-ended mallet, or add enzymes like actinidin from kiwi fruit, papain from papaya, or bromelain from pineapple, or you can braise the meat to tenderize it. Brining it in saltwater does the same job, as does dry-aging it at 32 to 36 degrees F. Adding lemon juice, wine or vinegar to a marinade also breaks down the tough collagens.
The following recipe is so easy to make and it is considered by many to be the best steak marinade with meat tenderizer. If you want to freeze the meat rather than cooking it right away, reduce the recipe by half (except for the steak) and put the meat in a zippered freezer bag with the marinade. Freeze it and thaw it out in the refrigerator the night before you want to cook it.
The kind of BBQ sauce and salad dressing you use in the following recipe makes a difference, so pick something you know you like and avoid anything with too much salt. Just use whatever you happen to have in your refrigerator already, to save you having to go out and buy more.
2 teaspoons garlic pepper
1 cup Italian salad dressing
½ cup Worcestershire sauce
2 lbs beef sirloin tip steaks
1 cup BBQ sauce
1 teaspoon meat tenderizer
Combine the garlic pepper, dressing, Worcestershire sauce, BBQ sauce and meat tenderizer, then pour this mixture over the meat, ensuring it is fully coated.
Cover and refrigerate for 2 hours.
Preheat the grill to high and brush some oil over it so the steak does not stick.
Grill the steaks for 10 minutes per side or until they are done.
Discard the marinade.
A meat tenderizing powder can be added to marinades or sprinkled on raw meat. If you are sprinkling it on the meat, use a fork or meat mallet to help it penetrate deeper. This marinade is juicy and flavorful and you can see how appealing the finished steak looks, especially when served with such appetizing, colorful side dishes. A meat tenderizing powder is not crucial when making a marinade but it does make the steak extra tender and also shortens the marinating time, because it breaks down the collagen and gets your steak really soft.
