Sherry and Chili Chuck Steak Marinade

Chuck steak requires a steak marinade to make it tender. This cut comes from the shoulder of a cow and it is fatty and tough, which means it is better to either braise it in a liquid or marinate it before you cook it. The following recipe is good for about three and a half pounds of chuck steak and you can serve the finished steaks hot with mashed potatoes or serve it cold in a sandwich.

The mustard and chili add some spiciness to this marinade and because you are going to use the marinade to baste the meat, the flavor will be full-on so feel free to decrease the amount of mustard or chili if you are not keen on spicy meat dishes.

Chuck Steak Marinade with a Spicy Kick

Ingredients -

1 teaspoon mustard powder
1 seeded, chopped fresh red chili
2 fl oz olive oil
2 fl oz red wine vinegar
2 teaspoons white sugar
5 crushed cloves garlic
2 tablespoons soy sauce
2 tablespoons tomato concentrate
3 fl oz dry sherry

Preparation:

Stir the mustard powder, chili, oil, vinegar, sugar, garlic, soy sauce, tomato concentrate, and sherry together and pour the mixture over your chuck steak. Let it marinade for 24 hours, turning it occasionally.

Grill on a covered grill, over a moderate heat, basting every 15 minutes until done.
