This is a rich and full flavored recipe and it is the best steak marinade using beer as an ingredient. Beer has many different uses. It can be used to make a light and delicate batter for cod or similar fish, you can use it in the creation of satay sauce, or you can use beer to make a delicious marinade like we are doing here. If you are new to using beer in recipes, give it a go.
The results are really good. The finished steak will not taste like beer but you will find that the beer does add a heartiness to the flavor and adds an interesting earthy hint to the steak marinade. Basting the steak with this marinade while it cooks keeps the steak moist and adds more flavor. This recipe goes nicely with mashed potatoes, or you might prefer to serve it with fries.
The meat will come out really juicy and both the marinating and the basting help with this, as does only cooking it to medium-rare. Overcooking steak dries it out, so you will want to avoid that if you can. Cook this steak over a hot charcoal grill to infuse it with smoky flavor.
2 cloves garlic, finely chopped
1 cup beer
1 tablespoon Worcestershire sauce
2 tablespoons brown sugar
½ cup vegetable oil
1 onion, thinly sliced
1 ½ lbs flank steak, scored
½ cup lemon juice
Cook the garlic and onion in a skillet in half the oil until soft, then remove from the heat and add everything else except the flank steak.
Put the meat in a baking dish and pour over the marinade.
Cover and refrigerate between 6 and 12 hours, turning occasionally.
Remove the steak from the marinade and broil or grill, basting frequently with the marinade.
Flank steak has a distinctive appearance, as you can see in the photo. It comes in large pieces and has an almost ragged look when you cut it. Served with mashed potatoes or fries, this makes a hearty and delicious meal, especially if you accompany it with some vine tomatoes like you see in the picture, or a similar colorful salad ingredient. If you do not tell people that you have marinated the meat in beer, they will never be able to guess, because the flavor is not apparent in the finished dish. This is a satisfying meal and once you have seen the picture you will probably want to add this to your 'make very soon' list!
