How Marinades Have Evolved Through History

So how did marinating meat come about? Well, cattle were first introduced to the New World in 1540 by the Spanish. Cattle were not indigenous to the Americas before the civil war so they were not known then. Ever since their introduction, however, beef has been enjoyed and cooked in many ways for centuries.

Spanish and French colonists started to raise cattle in the eighteenth century and they would transport them on the new railroads being constructed. In 1871, the introduction of refrigeration cars made the transport of meat much easier and meant the cattle could be slaughtered before its transportation.
