Marinating has been used for centuries because people in ancient times needed to preserve large cuts of meat. They used the sun, salting, and various other methods. Oils, acids, and spices were also used in ancient recipes because they improved the flavor of the beef and were found to tenderize it as well. The first recipe for marinating was probably discovered by accident when somebody was trying to preserve his or her beef a bit longer!

Different marinades and different fish or meats take different times to work. Small pieces of tuna for example can marinate in lime juice within ten minutes but a ten-pound beef brisket in soy sauce would need to soak overnight. If you are new to making these dishes, follow the recipes to the letter first of all and then try experimenting when you know which flavors work with which kinds of meat, and how long the meat needs to soak in the marinating liquid in order to get the best results.

Marinate your beef for as long as the recipe says. If the recipe recommends a two-hour marinating time, this should be sufficient. The more tender cuts will be ruined if you soak them in an acidic liquid for too long. If the recipe recommends that you marinate overnight then four hours is not going to be long enough to tenderize and flavor the meat, so follow the recipes if you are new to marinating.
