Jamaican Flank Steak Marinade

This Jamaican jerk marinade has rich, earthy, and sweet flavors and makes a wonderful meal out of a piece of steak. Combining orange, lime, garlic, ginger, cloves, cinnamon and more, this is a rich and flavorful flank steak marinade, which is also simple to put together.

When scoring the beef, you only need to score it a tiny way in, perhaps ⅛ inch. This is to allow the flavors of this recipe for flank steak marinade to soak further in and tenderize it. The citrus juices work well to make the flank steak tender and soft. This is nice served with a plain baked potato or plain boiled rice because the steak is so flavorful.

Recipe for Flank Steak Marinade

Ingredients -

2 teaspoons grated lime peel
2 teaspoons grated orange peel
3 tablespoons orange juice
3 minced cloves garlic
⅛ teaspoon ground cloves
¼ teaspoon ground cinnamon
1 teaspoon black pepper
1 teaspoon salt
1 ½ inch piece fresh ginger
3 tablespoons lime juice
¼ cup brown sugar

Preparation:

Mix all the Jamaican flank steak marinade ingredients together in a 2 quart glass dish, and then score the steak on both sides, using a sharp knife.

Add the steak to the marinade, turning it well to coat it all over.

Cover the dish and marinate the steak in the refrigerator for a minimum of 2 hours.

Discard the marinade and cook the steak.
