Ingredients -
5 jalapenos
½ cup cumin seeds
1 ½ cups olive oil
2 bunches cilantro (stems as well as leaves)
1 ½ teaspoons salt
1 tablespoon cracked black pepper
3 cloves garlic, crushed
⅓ cup lime juice
Preparation:
Remove the ribs and seeds from the jalapeno peppers and chop the peppers up.
Toast the cumin seeds in a dry pan over a low medium heat until they are fragrant.
This should take about 5 minutes.
Combine the jalapenos, cumin seeds, salt, lime juice, pepper and garlic in a blender, then pulse the mixture well.
Add the cilantro and oil and puree until the marinade is smooth.
Score both sides of the steak with a knife so the marinade can penetrate deeper, and then put the steak in a big bowl.
Pour the Mexican steak marinade over the top and ensure the steak is coated all over.
Let it marinate for 24 to 48 hours in the refrigerator.
