Soy sauce as a marinade is very popular because the earth, rich flavor goes well with the taste of beef or steak. To marinade steak in soy sauce you can use either light or dark soy sauce, depending on the other ingredients.
Wasabi gives the marinade a spicy flavor and the mirin, ginger, cilantro and lemon all work together to create a delicious blend of Japanese inspired ingredients for marinating your steak. Serve this one with rice and save some of the coriander or parsley to sprinkle over the finished steak as a garnish instead of including it all in the marinating liquid.
Ingredients -
1 teaspoon white sugar
1 teaspoon wasabi paste
1 ½ inches fresh ginger, sliced finely
⅓ cup soy sauce
⅓ cup mirin
⅓ cup water
Handful of fresh parsley or cilantro, chopped
1 lemon
1 teaspoon black pepper
Preparation:
Squeeze the juice out of the lemon and combine it with all the other ingredients.
Put the steak in a glass dish.
Add more soy sauce, water and mirin (in equal amounts) until you have enough marinade to cover the meat.
Leave it to marinate for several hours.
